Bread
Here is my first loaf of Gluten Free Failsafe (GFFS) Bread. Isn't it a beauty? It is the prettiest loaf of bread I have ever made.
The only problem was it could have used a few more minutes int he oven.
The recipe is from the GF section of the Failsafe Cookbook by Sue Dengate but using my own flour mix.
Amber's GFFS Allpurpose Flour #1
2c Millet flour
2c Glutinous Rice Flour
1c each Brown Rice Flour
Rice Flour
Buckwheat flour
Chickpea flour
Sift all ingredients together 3 times.
In my experience the more variety of flours the better. While according to the book tapioca, sago and corn starch are failsafe I know of failsaferes who cannot have these. We think it is due to residual chemicals from processing so we are choosing to limit these three during the elimination period and may add them back in later.
Other wise any flour made from grains or beans should be failsafe.
We used the bread for french toast this morning, I didn't freeze them correctly and the pieces were difficult to separate but Samantha ate it so that is a good start. For as long as Samantha can remember I have been making a bread that is half corn meal (not failsafe) so we'll see how she adapts to this new variety.
To my more experienced GF taste buds this loaf is very satisfactory. It will need to be toasted before using in a sandwich. And next time I'll cook it an extra 10 minutes as it was too soft in the middle.

For those who are curious what a Celiac eats during an elimination diet here is a sample
Day 1
Breakfast: French Toast with Maple Syrup or Golden Syrup
Lunch: Rice cooked with millet, chive omelet and green beans
Snack: Rice Crackers with home made hummus, GFFS bickies
Dinner: microwaved pealed potatoes with butter, lamb chop, cabbage with spring onions
Dessert: Home made ice cream pops
Day 2
Breakfast: Homemade GFFS Granola with milk or plain yogurt
Lunch: Left over potatoes and cabbage with a fried egg
Dinner: Hash browns with "baked" beans (canned barlotti beans cooked with spring onions, a dash of salt and a bit of maple syrup)
Snacks: rice crackers and hummus or rice cakes with cashew butter and GFFS bickies
Day 3 we go shopping so we haven't decided yet.
Other ground breaking news! Today was our last meeting together before the split. Perth now has two Chinese Congregations. It took 26 Years. Today was full of excitement and photo taking.(I forgot my camera, sorry.) We are remaining in the Perth Central Mandarin Congregation.
So life is very full as always.

ReplyDeleteYes, a beautiful loaf of bread! Congrats on the formation of a new congregation. It's sad to have to be separated from friends, but also exciting to see the growth!
ReplyDeleteYes, if you would come prepare fresh bread for me, I think trying out the diet would be grand:) Congrats on the split! I agree with Jonalyn, separating from friends is sad, but at least for good reason.
